I trust that everyone had a wonderfully Merry and Holy Christmas!
Happy Day-after-Christmas = the 1st Day of Christmas!

The 12 Days of Christmas are not, like most people believe, the 12 days preceding Christmas, but the 12 days between Christmas Day and Epiphany. I posted a couple of links yesterday that explain this better than I could.

Well, now that we've indulged in all kinds of cookies for 25 days, gained all kinds of weight (but did it "yummily") and that we need to get back to reality, this series of 12 recipes is going to be about healthy food that is tasty and satisfying. Most of them will be main dishes but some will be soups, or even a chocolate dessert!

I chose this first recipe simply because I'm cold 
. I'm spending the Holidays in Seattle, WA with my youngest Son and his family, but I'm no longer used to the cold...brrrr.
